Sourced through our Colombia coffee partners at Par Amo Coffee, this coffee comes to us from Gustavo Espitia. They sourced this coffee based on two parameters: First, how great his coffee tasted on the cupping table and second, based on how amazed the surprised they were to see great coffees coming out of states that they never considered as part of their sourcing program, like Boyaca.

They were definitely surprised by this coffee and plan to return to Gustavo's farm and others in Boyaca. This coffee is delightful. Light and fruity with a clean profil overall. Regarding the process, this coffee is a washed process which lends to its clarity.

Our roasting approach for this coffee was to highlight the intense fruitiness and cleanliness of this coffee. We hit it with some high heat in the beginning to fly through the drying and maillard phase to bring out the fruity and more delicate qualities this coffee has to offer. We're really happy with how this coffee has developed and hope you'll enjoy it as well!
