Coffee Origins

About This Coffee

Sourced through our friends at Know Where Coffee, this exceptional coffee comes from producer Jaime Nuñez in Palestina, Huila. Jaime, surprisingly once renowned for his passion fruit crops in Colombia, faced adversity when a pest wiped out his fruit harvest. Undeterred, he turned to specialty coffee, focusing on high-quality production at his La Reserva farm, where he cultivates unique varieties like Orange Wush Wush, Pink Bourbon, Laurina, Purple Bourbon, Lychee, and Caturra.

For processing, only the ripest cherries are harvested. A flotation process sorts the highest quality coffee, which is then fermented for 25 hours before being dry pulped. Afterward, the coffee dries under a canopy for 10–15 days, reaching a moisture content of 10.5%–11.5%.

A quick note on Wush Wush: This particular coffee we purchased features the rare Orange Wush Wush variety, an Ethiopian landrace initially selected for its disease resistance. With roots in the mountainous regions of Kaffa in Ethiopia, it’s only recently been recognized for its exceptional, exotic flavor profile and high cup quality.

When the coffee reaches our roastery, we explore and refine its unique characteristics, aiming to highlight its best expression. The cup is vibrant, complex, and sweet, with floral tropical fruit notes, tart apples, and hints of orange sponge cake. The fragrant grounds and aromatic brew lead into a syrupy body, while candy-like tropical and chamomile notes, and citrus hints resemble sponge cake. Subtle chamomile florality and creamy, buttery qualities round out the profile.

In short, this is a truly special, one-of-a-kind cup, rich in complexity and flavor—difficult to fully capture in words, but an experience worth savoring.
