About This Coffee
Paola Trujillo grew up on her father’s farm, Patio Bonito, in Caldono, Cauca, a place that has been producing coffee for over 40 years. Her father, Don Carlos Trujillo, focuses on sustainable farming, while Paola brings her own expertise to the fermentation and processing side of things. For this rare Wush Wush variety, she oversaw every detail with the same precision and care she is known for.
Picked at peak ripeness, the cherries first underwent 24 hours of aerobic fermentation. They were then sealed in GrainPro bags for 50 hours of anaerobic fermentation, with added CO₂ to shape the flavors. Afterward, the coffee was pulped, gently washed, and dried on raised beds.
We first met Paola during the 2024 competition season while visiting Colombia. Her warmth and energy always shine through in our conversations, and we’re thrilled to be sharing her coffee with you. Wush Wush is a rare Colombian variety believed to have Ethiopian roots. Her expression of this exotic variety is exceptional. In the cup, the first thing we noticed was how clean and sparkly it tastes, with a lemon candy sweetness that really pops. It’s bright and sweet, with a lively citrus acidity. That sweetness deepens into golden raisin notes, and the finish lingers with the rich, toasty flavor of burnt honey, reminding us of the Korean candy dalgona. We can’t wait for you to taste it.
